Sweet Onion Pork Pizza

makes one pizza

Prep: 30 min

Bake: 20 min

What you need:

-2 tablespoons vegetable oil, plus more for brushing

- 1 red onion, thinly sliced

- Salt and pepper

- 1 16 ouncepackage frozen pizza dough, thawed

- 1/2cup barbecue sauce

- 1/2cup canned tomato sauce with Italian herbs

- 8 ounces pepper Jack cheese, shredded (2 cups)

- 6 – 8 leftover baby back ribs, meat shredded and bones discarded (about 1 cup meat)

- 2 green bell peppers, seeded and cut into thin rings

What you do:

- In a large, heavy skillet, heat the oil over medium heat. Add the onion and cook, stirring constantly, until softened and brown, 15 to 20 minutes. Season with salt and pepper and remove from the heat.

- Invert a large baking sheet and place it on a rack in the lower third of the oven; preheat the oven to 500 degrees . Place a second inverted baking sheet on a work surface and cover with parchment paper. Stretch the pizza dough to fit the parchment, then brush with oil.

- In a small bowl, combine the barbecue and tomato sauces. Spread the sauce over the dough, leaving a 3/4-inch border. Top with the cheese, shredded meat, bell peppers and caramelized onions.

- Slide the pizza and parchment paper onto the preheated baking sheet and bake until the crust is golden and the cheese is bubbly, about 20 minutes.

Creamy Garlic Broccoli

makes 4 cups broccoli

What you need:

- 3 1/2 cups broccoli florets

- 1/2 cup creamy garlic hummus

- black pepper + lemon juice to taste

What you do:

- Steam, boil, roast or grill your broccoli florets.

- Toss the warm florets in the hummus – coating it as you would pasta with pasta sauce.

- Serve warm or place in the fridge to chill. Can be served both warm and chilled.

- Add lemon juice and black pepper over top to serve.

- Customize it! If you’re not a fan of garlic, use any variety of hummus, including lemon, chili, roasted eggplant, olive, parsley and more.

Ice Cream Sandwiches on a Stick

makes about 12 sandwiches

What you need:

- 12 mini ice cream sandwiches

- 12 Popsicle sticks

- 2 tablespoons sprinkles

What you do:

- Unwrap ice cream sandwiches and gently (this is key) slide the stick into the middle of the ice cream. If the ice cream is too hard, let it sit out for a few minutes to soften a bit.

- Roll edges in sprinkles and set on a parchment-lined cookie sheet. Continue until all sandwiches are on sticks. (You may have to freeze in between sandwiches if they start to melt).

- Put tray into freezer and serve within the same day.
